Description
In a nutshell:
A polished Chablis Grand Cru with bright citrus, serious mineral depth, and a silky finish that lingers long.
The lowdown:
Grand Cru Chablis is the pinnacle of the appellation and, at their best, make the sublime wines that made the region famous. This fine example comes from a tiny 0.09-hectare parcel in the Preuses vineyard so it's only made in very small quantities. Fermented in large, used oak demi-muids, it's all about balance - vibrant and fresh yet with the depth and weight you'd expect from a Grand Cru. The nose is precise and elegant, with citrus and stone fruit mingling with subtle toasted hints. On the palate, it's richly textured with striking minerality and a crisp acidity that carries the flavours beautifully through to a long, clean finish.
The Producer:
Domaine Soupé may be a something of a newcomer in Chablis, but the Soupé family themselves have been farming vineyards here for three generations. Run by brothers Frédéric and Jean-Michel, they combine a wealth of experience with a fresh approach. Jean-Michel takes care of the sustainably managed vineyards, spread across several parcels, while Frédéric focuses on winemaking, using indigenous yeasts and stainless-steel fermentation to capture the essence of their sites. Their focus on quality and authenticity has already made them a rising star in the region, and their wines are well worth keeping an eye on.
When to drink:
Pike in white wine sauce or chicken with morels would be spot on with this - elegant, rich dishes that complement the wine's citrus edge and refined minerality perfectly.
Suitable for Vegans
