The lowdown:
You can tell by the nuanced delicacy and rich flavours and texture that this is a serious Sauvignon Blanc designed to be age-worthy. Waterkloof only make it in years the fruit is good enough. It opens up with subtle honey, white flowers, fennel and citrus aromas and has a layered and textured feel in the mouth with a crispness and salinity balanced by the lightly honeyed fruit. As with some styles of Sancerre not all Sauvignon Blanc is meant for early drinking; the way this has been made here with a long, slow fermentation in oak shows a quite different side to its character.

Waterkloof, founded in 2004 by Paul Boutinot, is a haven for thoughtfully produced wines. This family-owned estate embraces organic and biodynamic practices, boasting the prestigious WWF Biodiversity Champion status. High on the Schapenberg hills, vineyards overlook False Bay, where cool breezes and long growing seasons nurture balanced grapes. In the cellar, winemaker Nadia Langenegger takes these gems and lets their natural character shine through minimal intervention. The results of her labours shine through clearly in their authentic, elegant wines.
When to drink:
Without doubt made to go with food it's perfect with seafood, and alongside dishes containing chilli, lime and coriander.
