The lowdown:
Palo Cortado is one of the lesser-known sherry styles and in characters lies somewhere between Amontillado and Oloroso. This is from Lustau's Almacenista range and made at Cayetano del Pino. It has a dark amber colour with leather and tobacco aromas. Dry and concentrated on the palate there is a multifaceted range of coffee, spice and dark chocolate flavours.
The Producer:
Starting in modest circumstances back in 1896 Lustau originally sold their wines to larger producers rather than market them under their own name. It wasn't until the 1940s that they commenced with their own bottlings and this saw the start of real growth in their reputation. While still a small sherry house by the standards of many they are, nevertheless, one of the most respected and their range of sherries, including the acclaimed Almacenista collection, vermouths and brandies are consistently sought after.
When to drink:
Finishing with a prodigious length it's a complex and rewarding sherry. Serve it as an aperitif and with a wide of tapas.
