It's a light, delicate wine, but don't be fooled - there's a bright, zippy acidity that keeps things lively. Think flavours of chamomile tea and a touch of pear. This Manzanilla is special - a single-vineyard expression from Equipo Navazos (their 'La Bota' series, number 111 in fact). Made the traditional way, it's had time under flor, then a boost in alcohol, and a few more years to age. They only made 4,500 bottles, so it feels a bit special on top of being rather delicious.

Equipo Navazos isn't a winery; it's a movement. They're a collective of passionate individuals led by the revered Jesús Barquín, dedicated to unearthing the hidden gems of Andalusia's fortified wine regions. Their focus is simple: to find those rare, aged casks of sherry demonstrating extraordinary finesse and character and bottling these treasures in small batches. But they don't stop there. Recent collaborations with the likes of Dirk Niepoort and Sergi Colet have brought forth fascinating still wines from Jerez and captivating sparklers from Penèdes. Equipo Navazos showcases the soul of Spanish winemaking.
