Fermentation in oak vats adds a pleasing roundness to the palate, where flavours of stone fruit and honeyed notes mingle with crisp minerality. The finish is satisfyingly long and sustained. The Producer:
Waterkloof, established in 2004 by Paul Boutinot, is a bit of a favourite of those who appreciate wines made with care and a more than a touch of conscience. This family-run estate is proudly organic and biodynamic, even sporting the WWF Biodiversity Champion title. Perched on the Schapenberg hills overlooking False Bay, their vineyards benefit from cool breezes and a leisurely growing season, producing wonderfully balanced fruit. In the cellar, winemaker Nadia Langenegger allows the grapes to speak for themselves with minimal interference, creating wines that feel genuine, refined, and very much a taste of their unique surroundings.
