You don't often find oak aging in a Czech pilsner, which is exactly why this one stands out. Timeless begins with pale malt and Saaz hops, the cornerstones of the style, then spends weeks in French oak to pick up a touch of toast and gentle woodiness. The hop bite stays firm, only now with an added layer of complexity. Crisp, balanced, and very much the thinking man's pilsner.
The Brewery:
Sibeeria are part of the new guard shaking up Czech beer. Based in Prague since 2014, they clearly love a good lager but aren't about to stop there. One week it's a hazy IPA, the next a pastry stout or a tart little sour, and somehow they make them all work. The point isn't to chase trends so much as to show they can turn their hand to almost anything. In a land famous for pilsner, Sibeeria keep things lively by refusing to be boxed in.
