A crisp and floral white wine with subtle minerality, made from a native Japanese grape variety from the Yamanashi province.
The lowdown:
Grace Wine was established in 1923, in the Katsunuma province, the birthplace of the Japanese wine industry. Committed to the belief that great wine is made in the vineyard, they were the first to research and introduce European training and pruning methods in the 1990. Made from Japan's most important indigenous grapes: Koshu. The grapes for this wine are grown on the foothills of Mt. Kayagatake from estate managed vineyards at an altitude above 400 metres. The grapes were chilled upon arrival and underwent a long, gentle pressing. The fruit was fermented in stainless steel tanks to retain the purity of the fruit and characteristics of the Koshu variety. The wine is pure, with sublime crispness and subtle minerality, it is fresh and elegant with rich aromas of fresh pear, white peach, honeysuckle, rosemary, clove, and mineral stone notes. Dry, with a lively palate crisp, ripe fruits and a charming acidity which offers the wine great backbone, through to a hint of umami on the finish.
When to drink:
The structure of this wine would suit best being served alongside shellfish or lean fish dishes.
