A fascinatingly complex and interesting Sicilian white.
The lowdown:
Made from Grecanico which has been shown to have the same DNA profile as the more widely known Garagnega seen further north in Italy. Unusually for a white wine the juice has been macerated on the skins giving the finished result a much more rounded feel than would otherwise be the case. It then aged in terracotta amphora giving a fresh, dry wine with mild tannins, rich citrus fruits and dry herby and earthy notes.
The Producer:
COS began in the early 1980s, founded by Giusto Occhipinti and two of his classmates. With very little money, they started making wine from grapes grown in their parents' vineyards. Initially, they tried using toasty oak and creating bold flavours with over-ripe Nero d'Avola. However, they soon realised this wasn't the path they wanted to take. So, they decided to change course, opting instead for concrete and amphorae. Their approach to winemaking shifted as well, moving away from modern techniques to a more hands-off, non-interventionist style. Today, COS is recognised as a leading figure in Sicily's biodynamic wine scene, producing wines known for their freshness and aromatic complexity. They use native yeasts and have always avoided chemicals in their vineyards.
When to drink:
For a wine this quite in alcohol is has a great deal going on and for food matching it'll partner well with fish, poultry and pork dishes in creamy sauces.
