The lowdown:
This is a beautifully balanced Chablis, unoaked but given a touch of lees aging for a rounder, silkier texture while keeping its classic freshness and minerality. Ripe lemon, crisp green apple, and a hint of white peach shine through, softened by subtle notes of brioche and almond. The signature flinty, saline edge is there but with a gentler, more refined touch, making it nicely approachable. With zippy acidity and a whisper of creaminess, it's elegant and precise without feeling too austere, delivering purity, depth, and suppleness.
The Producer:
Long established in the region Jean-François Bordet can trace his family's roots in Maligny right back to 1590. The well-regarded estate of Seguinot-Bordetwhich he's the current custodian of lies on the right bank of the river Serein, where the rich Kimmeridgian soils give the wines the minerality so typical of great Chablis. His unusual horizontal fermentation tanks give the wines more lees contact during maturation, which add a layer of extra complexity to his beautiful, pure, wines.
When to drink:
An immediate thought for food pairing here is moules marinières, but to be fair, all sorts of other seafood plus charcuterie and even poultry would work perfectly well. And it's great just by itself.
