The lowdown:
The estate is run by the energetic and passionate Herve Felix, with the estate being founded in 1690 by his ancestors, the estate has remained in the family for over 300 years. The estate now covered 32 hectares, located 16km west of Chablis. This wine is produced from grapes grown on clay-limestone and Kimmeridgian Portlandian soils. Made from 100% Aligoté, this grape variety is early-ripening and has a naturally high level of acidity. Traditional winemaking methods are employed to produce a fresh and delicately fragrant white wine. Soft citrus and mineral notes are followed by riper citrus on the palate, with good body and come chalky textural elements coming through. Very moreish on the finish with refreshing acidity to the end.
When to drink:
Would pair best with grilled or steamed white fish dishes and simple salads.
