The Lowdown:
Table beer may sound modest, but Waves has plenty going on. Extra pale malt and oats give it a soft, rounded texture, while Vic Secret and Nelson Sauvin add detail in the form of crushed grape, tangerine and a touch of pine. The finish is smooth, the bitterness low, and the character quietly layered. A table pale that shows the style still has real depth.

Beak Brewery, nestled in the South Downs near Lewes, is a bird worth watching. Founded by food writer Daniel Tapper, they started life as a nomadic project, brewing hop-forward IPAs and saisons with the likes of Beavertown and Northern Monk. Now, with their own kit, they've landed in Lewes, and brew a diverse range of beers. Expect juicy IPAs alongside traditional best bitters and exciting mixed-fermentation projects.
