The lowdown:
Corallian - we call it The Elegant One, and with 70% Chardonnay in the blend, it more than lives up to the name - poised, precise, and every bit as refined as you'd expect. It's shaped by the coral-rich limestone under the vines, which gives it that distinctive mineral streak. Up front, theres apple blossom, sea spray, and a bright touch of lemon, leading into richer layers of preserved lemon, roasted almond, and just a hint of salinity. A bit of barrel ageing adds a delicate nuttiness, smoothing everything out nicely. Not one to shout, but quietly impressive, with a complex, creamy, and savoury finish that lingers.
The Producer:
Dorset-based Langham Wine Estate takes its lead from the Grower Champagne movement across the Channel, applying the same focus on terroir and low-intervention winemaking to English sparkling. Blessed with chalky soils and the West Country's long growing season, they can produce wines with real depth and character. Their approach in the vineyard is minimal intervention, allowing the fruit to speak for itself, while in the winery, the aim is to build richness and complexity without losing the freshness and precision that defines English fizz. With 34 hectares of south-facing Chardonnay, Pinot Noir, and Pinot Meunier vines rooted in clay and flint over limestone, they have the raw materials to produce the quality of wines that stand among Englands best.
When to drink:
A natural aperitif, but more than up to the task with food - try it with fresh oysters, garlic butter prawns, or a baked Camembert. Crisp acidity, subtle richness, and gone from your glass before you know it.
