The lowdown:
A classy Sancerre made by family run Domaine Sylvain Bailly who are based in the famous of village of Bué with the grapes for this special cuveé coming from the renowned Chêne Marchand vineyard. In English 'The Merchant's Choice' (a number of stories as to why it is called this, but it has been known as very good for a long time) this is one of Sancerre's great vineyards, situated on a gentle south facing slope with limestone soils it produces wines with a minerally acidity, great depth and complexity, and some ageing ability. Aromas of citrus fruits, floral touches and clean minerally notes lead onto a generous palate with a lovely weight and richness and a real juicy, mouth-watering, lingering acidity that brings structure and a long and persistent finish.
The Producer:
Sitting in the village of Bué, in the heart of Sancerre, lies Domaine Sylvain Bailly. This family-run estate is helmed by Sonia Bailly, her father Jacques, and her husband Matthieu, carrying on the legacy of founder Sylvain Bailly. While most of their vineyards are in Bué, they also tend to parcels in neighbouring villages and even have some vines further afield in Quincy. Their wines, noted for their beautiful texture and stunning precision are a true reflection of their dedication to the craft.
When to drink:
Made to go with goat's cheese, try also with fresh water fish such as Pike in a beurre blanc, or scallops or mushrooms with a cream sauce.
