A crisp, dry and exquisitely subtle Côte de Beaune white Burgundy.
The lowdown:
While his Chassagne-Montrachets are much sought after hard to find this white of Jean-Marc Pillot, from the nearby appellation of St-Romain, is well up to the standards of his more well-known wines and is also great value for money. It has a real depth of fruit flavour and broad richness on the palate. While the structure is nicely firm and leads to a long, smooth and harmonious finish.
The Producer:
Since taking over the small 10 hectare estate based in Chassagne-Montrachet from his father Jean, Jean-Marc has achieved real success with his wines and they're now very much in demand and he's certainly among the top rank of Chassagne-Montrachet producers. In recent years he's reduced the amount of new oak used. The long, cool fermentations he gives his wines are followed by around 15 months aging in cask which give wines with a rich intensity, powerful aromas and opulent fruit on the palate. One of his trademarks is wine that show well when young whilst retaining the ability to age gracefully.
When to drink:
This vintage, the 2021, is at its peak now and is wonderfully rewarding. Great with meaty white fish like sea bass.
