Description
In a nutshell:
A classic Margaret River Cabernet Sauvignon, complex yet approachable, with deep primary fruit flavours and velvety soft tannins.
The lowdown:
Margaret River's climate has plenty in common with Bordeaux, so it's no surprise that the Cabernet Sauvignons from here share a few traits. You could call it Bordeaux's spiritual cousin - just with a bit more purity of fruit and a touch less austerity in youth. This one kicks off with blackcurrant and a hint of fresh bay leaf, a classic Margaret River hallmark. Beneath the ripe fruit, there's a savoury edge of cedar and a whisper of dark chocolate, with ten months in French oak adding subtle spice and structure. Soft, velvety tannins linger long after the last sip - so this is serious refinement for a modest outlay.
The Producer:
Larry Cherubino Wines is a name that consistently pops up when discussing Western Australian wine. Larry Cherubino, the man behind the label, is a bit of a legend in the region. After graduating from Australia's prestigious Roseworthy program, he spent years honing his craft around the world before returning home in 2005 to set up his own show. Today, he's not only making highly regarded wines under his own label, but also lends his expertise to a number of other big names. Larry's a bloke who wears his passion for winemaking clearly on his sleeve, and it shows in the quality of the wines he produces.
When to drink:
Rich yet refined, this is made for roast rib of beef or a classic steak frites. Iit also stands up nicely to mature cheddar or a well-aged Comté, bringing out its savoury depth.
