The Brewery:
Belgium is synonymous with lambic beer and one of the most famous producers is Brasserie Lindemans. The brewery in Vlezenbeek, south-west of Brussels, is a family affair that was founded in 1822. It uses traditional methods to create a range of lambics that are both complex and refreshing. The brewery is renowned for its spontaneous fermentation techniques, which rely on wild yeasts and bacteria to create unique flavours. Lindemans' lambics are aged in oak barrels for extended periods, which results in a depth of character that is often imitated but rarely equalled.
