Out of Langham's two Classic Cuvée wines Corallian is the graceful one, thanks to the 70% Chardonnay that lends it a certain elegance and precise character, derived from the chalky Dorset terroir. Aromas of apple blossom, sea spray, and a touch of lemon set the scene, while on the palate, it offers a rich texture with preserved lemon, roasted almond, and a refreshing hint of salinity. Partial barrel ageing adds a delicate nuttiness. It's a wine that doesn't shout but quietly impresses, with a finish that lingers long enough to keep you interested.
The Producer:
Tucked away in the rolling Dorset countryside, just northeast of Dorchester, Langham Wine Estate is quietly becoming one of the more notable names in English sparkling wine. With 34 hectares of south-facing vines - Chardonnay, Pinot Noir, and Pinot Meunier - rooted in the sort of clay and flint soils over limestone that sparkling winemakers dream of, they're sitting pretty. Their approach is one of meticulous care in the vineyard along with the minimum of chemical intervention and as little meddling as possible in the winery. And it shows - they produce a range of wines that are consistently impressive.
When to drink:
It's lovely all on its own of course, but if you fancy a nibble, try it with oysters, shellfish, or a bit of Camembert.
