The lowdown:
If you're partial to tequila, then this Mexican spirit will be up your street as well. Rather than being made from Blue Agave, tequila's raw material, sotol is made from the plant called sotol, or desert spoon, which is native to the northern states of Mexico and where the spirit it makes is a speciality. The production process is broadly similar to tequila, but its character has a few distinct differences.
This is triple distilled and aged in new French oak for more than 6 months and has nicely rounded aromas and sweet vanilla and floral notes alongside the spicy notes you get from the sotol plant itself. Pleasingly smooth and elegant it's classically Mexican but with a subtly different feel.
The Producer:
From their home in the Mexican state of Chihuahua, Hacienda de Chihuahua has been crafting sublime sotol since 1881. This understated gem specialises in a spirit made from the desert spoon plant, or sotol, all organically cultivated on their own land. And their years of expertise and dedication to organic practices marks them out as one of the top producers of this northern Mexican speciality.
