A rare style of Sherry which is elegantly complex.
The lowdown:
Palo Cortado sherries come from wines that start out life intended to be a Fino but, because they don't for some reason develop the characterstic flor, start to age in an oxidative style more like Olorosos. Only about 1 or 2% of sherries age in this way. Aged for around 30 years the result combines the pure tangy nuttiness of Amontillado with the smooth smoky richness of Oloroso in an elegant complex style with notes of dried fig, orange peel, roasted nuts and spice.
When to drink:
An excellent, niche, sherry from a top quality boutique bodega.

Everything you could possibly want in a Palo Cortado, a wine evenly poised between Amontillado and Oloroso. Toasted and buttery, with walnut notes on the nose leading into a resoundingly bold palate of honey, bitter caramel and a lift of saltiness. The power is carefully controlled through to an elegant finish.
