An incredible and different off-dry white wine from Jerez made entirely from Pedro Ximenez.
The lowdown:
The grapes for this wine have been left on the vine for an extra 21 days and therefore acquire a natural sweetness without becoming overly so. After fermentation the wine is then aged for 4 months on its lees in old American oak barrels before bottling with no more than 25,000 bottles produced a year. Intense aromas of figs raisins and prunes with pastry notes lead onto a rich and weighty palate but with great natural acidity and sweetness with ripe stone fruit flavours. A long and elegant finish.

Ximénez-Spínola is a winery based in Jerez and was founded by Philipe Antonio Zarzana Spinola in 1729. The winery's usp is that there aren't many who focus on only one varietal, but that is precisely what Bodegas Ximénez-Spínola have done since their foundation. They've worked solely with the Pedro Ximénez variety (often known by its initials 'PX') to produce a selection of still and dessert wines, sherries and vinegar. After nearly 3 centuries, with the winery remaining in the hands of the founding family, they show the same dedication to the solera system as they always have. Their vineyards are located in prime locations for growing Pedro Ximénez - between the towns of Jerez, Sanlúcar de Barrameda and El Puerto de Santa María.
