A 72cl bottle of an enjoyably refreshing and flavoursome sake from Akashi-Tai in Osaka Bay.
The lowdown:
Akashi-Tai's Honjozo sake uses Gohyakumangoku rice which is milled down to just 60% of it's original size which makes for a sake that's full of tropical fruit notes, some earthy flavours and a nice creaminess. It's got a light and smooth body and is traditionally served warm.
The Producer:
Based in the town of coastal town of Akashi just west of Kobe the Akashi Sake Breweryhave been making sake since 1918. They take pride in using the best ingredients, in particular the Yamada-Nishiki rice variety which known for its high quality. While they still brew by hand in small batches using traditional methods and equipment, they also take on board modern developments whenever they can improve things. An example of this being their Genmai Aged Sake, the first ever made using brown rice. A trailblazer for authentic Japanese sake, their products are exemplars of what good sake should be.
