In a nutshell: Juicy, fresh and fruity, a perky and pleasing Stellenbosch red blend
The lowdown: Take the spiciness of Syrah, the fresh fruits of Petit Verdot and the juiciness of Cabernet Franc and Merlot and with skill and expertise make a harmonious blend which combines these attributes to best effect and this is what you end up with. Fresh and fruity to start with good acidity that evolves into something a riper on the tongue with a lightly herbaceous tone. Waterkloof made wonderful biodynamic wines of which this is a perfect example.
Founded by Paul Boutinot in 2004, Waterkloof is a family-owned, organic, biodynamic and WWF Biodiversity Champion farm perched high up on the windswept Schapenberg, overlooking False Bay and The Atlantic Ocean. Living soils, naturally low yields and a long growing season help provide talented young Cellarmaster Nadia Barnard with naturally balanced grapes that are imbued with a truly defining sense of origin. Those grapes are then transformed into wine with a minimum of intervention. The resulting wines are fine, inimitable and made to be enjoyed with good food.
When to drink: Very versatile, it's an easy one to match with food. Notoriously difficult to pair tomato based dishes certainly work well with this.
