A single malt Irish whisky from Waterford's Single Farm Origin series. All the barley for this expression comes from the Hook Head farm in Ireland's County Wexford. It's another of Waterford's exploration of how even subtle changes in a barley's growing environment can drastically change a whisky's flavour profile.
Tasting Note:
Nose - Opens with a whisper of sea spray and flinty minerality, followed by ripe orchard fruit and warm spice notes like clove and cinnamon.
Palate - A burst of white pepper and a salty tang, followed by sweet citrus, honey, and a hint of caramel.
Finish - Medium-long with a lingering spice, a touch of salinity, and hints of orchard fruits.

Collaborating with Irish farmers, they select barley from unique soils and microclimates, distilling each harvest separately to create 'Single Farm Origin' whiskies. These expressions highlight terroir-driven flavour variations. They also produce complex cuvées by blending these whiskies. Committed to organic and biodynamic farming, they believe it yields the most flavourful barley.
