The Lowdown:
Waterford Cuvée is a flagship release from the Waterford Distillery. It's a carefully constructed blend of multiple Single Farm Origin whiskies - those made from barley grown on individual Irish farms. The foundation of the Cuvée lies in meticulously crafted Single Farm Origin whiskies. Each of these showcases the unique flavour profile derived from the barley's specific farm and growing conditions. Being a blend of different terroirs it offers a kaleidoscope of flavours and shows how a single variety of grain can produce such diverse and delicious whiskies depending on where it's grown.
Tasting Note:
Nose - Full of orchard fruits and a burst of fresh citrus, followed by warm spice notes of ginger and cinnamon. Honeyed sweetness and a hint of vanilla linger in the background.
Palate - Creamy texture with a vibrant mix of spice and fruit - black pepper, clove, baked apple, and a touch of stone fruit. Layers of dark chocolate and toasted almonds emerge.
Finish - Long and satisfying. The spice fades into a gentle warmth with lingering hints of orchard fruit and a touch of honeyed sweetness.
The Producer:
Waterford Whisky may have gone into administration in late 2024, but since its demise, its cult following has only grown and bottles are steadily becoming harder to find. Founded in 2015 by Mark Reynier, they only had a short life, but made a big impact. Their USP was exploring terroir's impact on whisky by championing a barley-forward approach and, in collaboration with individual farmers, selecting grain from unique soils and microclimates and distilling each harvest separately to create distinctive single origin whiskies that showed clear, farm-by-farm flavour influence. Sadly it was a project not destined for success, but such was their reputation that remaining bottlings are slowly becoming collector's items.
