Vibrant and spicy Irish whisky crafted from Ireland's first biodynamic barley harvest.
The Lowdown:
A groundbreaking Irish whisky and - we're pretty sure - the world's first crafted entirely from biodynamically-grown barley. Biodynamic farming goes beyond organic practices, treating the farm as a living organism, prioritizing soil health, natural processes, and even incorporating lunar cycles. This approach aims to infuse the barley with a unique vitality and sense of the land it was grown on - a character that shines through in the final whisky. This is more than just a delicious dram, it's a pioneering exploration of whisky's agricultural roots.
Tasting note:
Nose - Warm spice bazaar on a summer afternoon cinnamon, cardamom, and a hint of clove mingle with fresh rye bread and sun-ripened apricots.
Palate - A burst of lively spice, like black pepper dancing with sweet ginger. Creamy vanilla and sugared almonds emerge, layered with a subtle orchard fruit medley.
Finish - Luminous and lingering. The spice transforms into a comforting warmth balanced by hints of orchard fruit and a whisper of custard.
The Producer:
Waterford Whisky may have gone into administration in late 2024, but since its demise, its cult following has only grown and bottles are steadily becoming harder to find. Founded in 2015 by Mark Reynier, they only had a short life, but made a big impact. Their USP was exploring terroir's impact on whisky by championing a barley-forward approach and, in collaboration with individual farmers, selecting grain from unique soils and microclimates and distilling each harvest separately to create distinctive single origin whiskies that showed clear, farm-by-farm flavour influence. Sadly it was a project not destined for success, but such was their reputation that remaining bottlings are slowly becoming collector's items.
