Description
In a nutshell:
A ripe, juicy, and youthful style of Merlot from the northern Italian regions of Trentino and Veneto.
The lowdown:
This wine is produced in the hilly areas of the Vallagarina Valleys of Northern Italy. The vines are trained in Cordon Spur and Guyot methods in the Veneto region and Pergola trentina and Guyot methods in Trentino. The grapes are harvested once fully ripe, often occurring towards the end of September. Fermentation takes place at a temperature of 26-28 degrees Celsius in small stainless-steel tanks. On the nose aromas of ripe, plummy fruit with a hint of spice. On the palate, a medium body with soft juicy berry fruits, balanced by fresh acidity, lightly herbal notes and easy supple tannins.
The Producer:
Cavit is a leading co-operative in the mountainous Trentino region of northeast Italy, starting as a consortium of grape growers in 1950. Today, they bring together 11 cellars, over 5,000 growers, and more than 6,000 hectares of vineyards across the region. Their influence is so significant that Cavit accounts for more than half the wine produced in Trentino. Theyve built a reputation for quality and consistency, making a wide range of wines that showcase the unique terroir of the area.
When to drink:
Pairs well with meat charcuterie boards, pizza or pasta dishes.
