This is Rathfinny's estate-grown Sussex sparkling, made in the traditional method and defined by its dry, chalk-edged precision.
The Lowdown:
If England had a Champagne belt, Rathfinny would sit bang in the middle of it among the chalky folds and ridges of the South Downs. And they turn out wines that make the comparison not fanciful at all. The 2019 Classic Cuvee is the estate's house-style blend of Pinot Noir, Chardonnay and Pinot Meunier, aged three years on lees for depth and balance. A low 5 g/L dosage keeps it on the drier side of Brut, so the apple and citrus fruit stay crisp, the brioche note restrained and the finish long and mineral. Firm, focused and very precisely made.
