A powerful and concentrated biodynamic Georgian white.
The lowdown:
Georgia is one of the most ancient winemaking regions in the world with a range of indigenous grape varieties that are not often seen elsewhere. Tsolikouri, which here is aged on its skins in terracotta qvevri, makes a wine with an almost orange hue and quite intense flavours of honeysuckle, lychee and concentrated orange citrus.
When to drink:
It's a skilfully made natural wine made without added sulphur and makes a great partner to roasted chicken or guinea fowl.

Situated in the heart of the Caucasus mountains in what is one of the most ancient wine growing regions in the world - viticulture was certainly practiced here as far back as 6,000 BC - Pheasant's Tears was established in 2007 with the explicit aim of reviving traditional Georgian winemaking techniques and varieties. The 20th century had seen the rise of many large scale wineries in the country with practices detached from the land and traditions.
All of Pheasant's Tears wines are fermented and matured in Qvevri, a unique Georgian ceramic vessel and among the first containers ever used for this purpose. No oak aging is used in their wines which gives the chance for the character of their rarely seen varietals to shine through.
