Authentic rich and ripe Georgian skin-contact white fermented and matured in traditional qvevri.
The lowdown:
Although Pheasant's Tears are a relatively young winery the land they farm, the grapes they grow and the methods they use are anything but. Known as the cradle of wine Georgia can claim to have been making wine from around 6000 BC, pretty much longer than anyone else. The traditional vessels used are qvevris which are made of clay and sealed with beeswax and then covered in earth and left alone. Since the end of the Soviet era there has been a rebirth of these traditional winemaking practices along with many old native varieties, such as Kisi, being saved from near extinction.
The vineyards are in the Alazani Valley, eastern Georgia and are farmed organically with the winery sitting in the middle allowing the grapes to be harvested and pressed before the heat of the sun gets too much. As is traditional the ripest stems are added to the grape skins, juice and pits and macerated, fermented and matured for several months in clay qvevri which have been buried underground. No fining or filtration takes place before bottling.
Golden amber in the glass with rich and ripe stone and tropical fruits along with dried fruit notes and exotic spice aromas. The palate is again rich and quite full with fresh tannins and acidity, a richness to the quality of fruit and a real minerality running throughout.
When to drink:
Definitely a food wine, no a feast wine! Try with rich pork or veal dishes, stews, grilled vegetables, or hard cheeses. Please don't drink at fridge temperature, try slightly chilled/cool.
