Delicious soft and fruity Spanish Pet-Nat rosado sparkling from Rioja.
The lowdown:
On the cool-climate, north facing single vineyard of Paraje de Aventines Nivarius grow a small amount of Garnacha from which they make this incredibly tasty and very easy-drinking pink fizz. Pet-Nat, or Méthode Ancestrale, is one of the oldest forms of sparkling wine where fermentation is finished off in the bottle resulting in a crisp and dry sparkling wine. The coolness of the vineyard means great natural acidity and a long ripening period after which the grapes are hand-picked and gently crushed with everything being done to preserve the delicate red fruit flavours. In the glass fresh and fragrant aromas of orchard and wild strawberry fruits with touches of floral blossom notes lead onto a clean and rounded palate with loads of ripe and juicy strawberry and red cherry flavours balanced by the crisp acidity.
The Producer:
Bodegas Nivarius, is quite unusual for Rioja in that they specialise in whites and rosés rather than red wines. Their vineyards, perched on high-altitude, north-facing slopes, benefit from the sort of cool climate perfect for producing the type of fresh and aromatic wines theyre looking for. And with a focus on the region's indigenous varieties, Nivarius is all about sustainable agriculture and minimal intervention in their winemaking, aiming to let the terroir speak for itself.
When to drink:
A super easy drinking aperitif, or try with salmon, risotto, and can work well with chocolate.
