The Lowdown
Made in Rioja using the Méthode Ancestrale, this gently fizzy rosado finishes its ferment in the bottle - creating soft bubbles, a dry snap, and plenty of lift. Redcurrant, wild strawberry and a gentle savoury note lead the way, all carried through to a crisp, clean finish. It's unfiltered, so a slight haze or a bit of sediment in the bottle is entirely normal - and part of its charm. Made from Garnacha and bottled with no added sugar, it's fresh, characterful, and a refreshing shift from more polished sparkling rosés.
The Occasion
Perfect with grilled prawns, tomato salads, or feta and watermelon. The crispness and gentle bubbles work especially well with salty, summery dishes.
The Producer
Bodegas Nivarius, is quite unusual for Rioja in that they specialise in whites and rosés rather than red wines. Their vineyards, perched on high-altitude, north-facing slopes, benefit from the sort of cool climate perfect for producing the type of fresh and aromatic wines they’re looking for. And with a focus on the region's indigenous varieties, Nivarius is all about sustainable agriculture and minimal intervention in their winemaking, aiming to let the terroir speak for itself.
