Among Langham's two signature Classic Cuvées, this one, Culver, is the plush and full-bodied sibling, thanks to its Pinot Noir dominance. Savoury and spicy, it greets you with hints of cherry, black pepper, and a whiff of marzipan. On the palate, there's a creamy mousse and a rich texture, balanced nicely by a bright acidity that keeps everything in check. Fermentation in a mix of stainless steel and old ex-Bordeaux, Burgundy, and Champagne barriques is where it gets all its lovely richness and complexity. A bit like wearing a smart suit with comfy shoes - elegant, but with a relaxed edge.

Tucked away in the rolling Dorset countryside, just northeast of Dorchester, Langham Wine Estate is quietly becoming one of the more notable names in English sparkling wine. With 34 hectares of south-facing vines - Chardonnay, Pinot Noir, and Pinot Meunier - rooted in the sort of clay and flint soils over limestone that sparkling winemakers dream of, they're sitting pretty. Their approach is one of meticulous care in the vineyard along with the minimum of chemical intervention and as little meddling as possible in the winery. And it shows - they produce a range of wines that are consistently impressive.
When to drink:
A bit of a crowd-pleaser with food - try it with roast chicken, thyme, and lemon, where the Pinot Noir's earthy notes cosy up nicely to the herbaceous thyme.
