Icewine is one of the specialites of the Canadian wine industry. To make it you need frozen grapes which has the effect of concentrating the sugar levels in the berries to an extreme degree thus making an untcuously sweet wine. Some of the world's best icewines come from shores of Lake Ontario and Inniskillin are one of the foremost producers. For this wine ultra-ripe Vidal grapes are harvested, frozen solid, in the depths of winter and the bunches immediately pressed to obtain a viscous and concentrated juice which, after settling was fermented for 22 days in new French oak. It was then given an additional four months of ageing in French oak before being filtered and bottled. Supremely rich and concentrated it boasts flavours of ripe peach and juicy tangerine with a touch of warm baking spice. The lively acidity adds the perfect balance to this delicious nectar, its smooth texture and solid structure lead to an extended fruit filled finish.
The Producer:
Inniskillin is the winery that put Canadian Icewine on the map. Established in 1975 by Austrian chemist Karl Kaiser and Italian-Canadian agriculture graduate Donald Ziraldo, Inniskillin is now synonymous with top-quality Icewine, a fact underlined by the numerous awards they have won. Following Kaisers retirement in 2006, Bruce Nicholson joined Inniskillin in Niagara as senior winemaker. Born and raised in the Niagara Peninsula, Bruce sits on the technical committee of the Vintners Quality Alliance in Ontario (VQA) and the committee for Sustainable Winemaking of the Wine Council of Ontario. Bruce has become Canadas most awarded winemaker, with many awards including the Gran Premio from Vinitaly for his Icewine, in addition to being twice named Top Winemaker at the San Francisco International Wine Challenge.
When to drink:
