A gentle spritz brings lift without tipping into anything too lively, and ten months on lees adds a touch of roundness and weight. Made mostly from Hondarrabi Zuri, with a dash of Hondarrabi Zerratia and Chardonnay in the mix, this is a polished, contemporary expression of a classic Basque speciality - clean, zesty, and seriously well put together.
