A classically sweet and unctuous Pedro Ximenez Sherry.
The lowdown:
Until fairly recently, this sherry came with its own miniature padlock, which is what "Candado" means in Spanish. With a dark mahogany colour, its got pronounced and complex aromas of dried fruits, raisins, toffee and dark chocolate. Full and luscious, smooth and sweet, its everything youd expect from a PX. It's syrupy but not cloying, with flavours of Christmas cake, nuts, and dried figs. A classic example from one of Jerez's oldest bodegas.

Valdespino is a venerable bodega in Jerez and has a rich history that traces back centuries. Renowned for their exceptional sherries, they stand out as one of the few houses to make single vineyard bottlings, showcasing the unique terroir of each site. Their mastery shines through in their aged sherries, particularly their VOS and VORS expressions, which are revered for their complexity and depth. Their wines represent the pinnacle of sherry craftsmanship, showcasing decades of patient ageing and meticulous blending.

Drink it with a dessert like chocolate cake or drink it as dessert all by itself.
