Made entirely from Tinta de Toro - the local take on Tempranillo - it's exactly the kind of gutsy red that put the region on the map. Bursting with intense red and black fruit, it's got a touch of roasted coffee from four months in oak, adding to its full-bodied feel. But while it's undeniably rich and powerful, everything's in balance, with a smoothness that keeps it all in check. Classic Toro, through and through.
The Producer:
Perched on the sunbaked plateau of Castilla y León, Toro is a region that stretches along the Duero River in northwest Spain, its ancient vineyards rooted in sandy soils. At the heart of it is Bodegas Covitoro, the region's leading cooperative and one of the driving forces behind Toro gaining DO status in the 1980s. Formed in the 1970s, they specialise in the bold reds that define the area, made from Tinta de Toro - a local take on Tempranillo that's perfectly suited to the climate. It's fair to say that Covitoro is the backbone of Toro, which can be relied on for authentic expressions of the region.
When to drink:
This bold Toro is made for steak - think ribeye or a smoky chargrilled sirloin. Barbecued lamb chops or sticky beef short ribs work brilliantly too, and if you're feeling adventurous, even dark chocolate.
