A rich and complex biodynamic white from South West France made with the local Gaillac variety Loin de l'Oeil.
The lowdown:
Down in the beautiful Gaillac region of South West France, north east of Toulouse, Domaine Gayrard has proudly stood for five centuries, but it is only until relatively recently that the focus has been on wine. With a new generation at the forefront local varieties and organic and biodynamic viticulture have taken centre stage and have heralded a great set of cuveés. Made with the local variety Loin de l'Oeil (or Len de l'El) from a parcel of old vines growing on shallow limestone soils, hand-harvested, fermented in barrels, before being matured for a further 12 months on lees in 400l oak barrels. A rich and layered wine with a delicate finesse. Blossom and honeyed aromas with orchard fruit notes and lead onto a rich and rounded palate with pear and ripe stone fruit flavours, those honeyed notes and touches of exotic spice with light almond notes on the finish. The acidity is fine and balanced with the wine having great structure and a delicacy running throughout.
When to drink:
Try with scallops, white fish, pork tenderloin or veal cutlets.
