This most well known of Prestige Cuvée Champagnes is a real treat with wonderful floral aromas and a creamy palate.
The lowdown:
Such is Dom Pérignon's fame and reputation this is a wine that barely needs introduction. It's a blend of Chardonnay and Pinot Noir which is aged for at least 8 years before release, each vintage being a new and distinctive expression of their style. On the nose there's a medley of tropical fruits and white flowers along with citrus and orange peel hints which is followed on the palate by a real richness and generosity of flavours which play across the tongue. The finish is amazingly long, bright and invigorating.
The Producer:
Being one of the most celebrated Champagnes Dom Pérignon has a lot of myth and legend surrounding the eponymous monks claim to be 'the inventor of Champagne'. While a bit of an overstatement he was, nevertheless, a key person in its development being responsible for a lot of improvements in viticultural and winemaking practices in the 17th and 18th centuries. It wasn't until after his death that the stories became more embellished, creating good back story that's the secret of many a brand's success. Now, as one of the luxury goods group LVMHs labels, its among the most prestigious of all Champagnes.
When to drink:
It certainly doesn't disappoint and is the most impressive of aperitifs and great with fresh seafood.
