The lowdown:
Delamain's Pale and Dry XO is made purely from fruit grown in vineyards classified as Grande Champagne which are the most higly rated, and consequently expensive, in Cognac. Once blended the eaux-de-vie is then aged in old Limousin oak casks. It's called Pale because its much lighter in colour than many others of this age and Dry because only the natural sweetness of the spirit is present. The bouquet is intense with richly fragrant fruity notes of ripe apricot and citrus followed by notes of vanilla. On the palate it's light and delicate developing into fruit with a delectably dry finish.

Cognac Delamain is one of the oldest family-run houses in Cognac, established in 1824. The story starts in 1759 when Irishman James Delamain settled in the area. Fast forward nine generations, and Charles Braastad is now at the helm. They're all about premium quality, producing only XO or older Cognacs from Grande Champagne vineyards. Their flagship "Pale & Dry XO", created in 1920, is a testament to their meticulous approach, celebrated for its elegance and delicacy. It's an understated yet distinguished house thats quietly upheld its legacy for centuries.
