Brasserie de la Senne, founded in 2003 by Bernard Leboucq and Yvan De Baets, has been quietly but firmly shaping Brussels' indie beer scene. Well before hops were the height of fashion, they were crafting bitter, aromatic beers with a purpose. Sticking to traditional methods, they balance character with restraint - no showy gimmicks here. They dabble in barrel-aged and mixed-fermented brews too, and also using local Brettanomyces yeast. Distinctive beers that's distinctly Brussels.
