A laser-bright Côte des Blancs Champagne - pure Chardonnay, cut from Cuis chalk with precision and verve. Gimonnet relies on old-vine parcels in the premier cru village of Cuis. Reserve wines from multiple years are folded in, and the cuvée is matured three years on lees, developing texture without softening its edges. The style is exacting yet expressive: lemon zest, green apple and white flowers bound to a chalk-dry palate, with taut acidity and a lingering saline finish. Uncompromisingly pure, it distils Gimonnet's house character perfectly
The Producer:
Based in the Côte des Blancs village of Cuis, Champagne Pierre Gimonnet et Fils is notable even by the standards of the region for its focus on Chardonnay. The family's 28 hectares are spread across some 40 plots, including prized parcels in Vertus, Cramant, Chouilly and Oger. Brothers Olivier and Didier Gimonnet blend fruit from these varied sites to emphasise freshness, minerality and precision, while their use of reserve wines held in bottle rather than tank adds notable depth. The result is Champagne with both delicacy and lasting complexity.
When to Drink:
A natural aperitif and equally at home with oysters or prawns, where the saline cut proves most effective.
