Description
In a nutshell:
Exemplary Premier Cru Chablis, which deftly balances bright citrus and crisp minerality with a silky texture and a touch of ripe stone fruit for depth and elegance.
The lowdown:
Fourchaume is one of the finest of the Chablis Premier Cru vineyards, known for producing somewhat fuller-bodied, more structured wines with a rounder, more generous character - and this is a good example. Unoaked in the Seguinot-Bordet style, it gains extra depth and texture from time on lees, giving it a beautifully refined balance. Crisp citrus, ripe white peach, and delicate floral notes shine through, supported by a richness that lingers elegantly on the palate. Expressive and complex, it's a Premier Cru with both precision and generosity, striking the right balance between minerality, texture, and depth.
The Producer:
Long established in the region Jean-François Bordet can trace his family's roots in Maligny right back to 1590. The well-regarded estate of Seguinot-Bordet which he's the current custodian of lies on the right bank of the river Serein, where the rich Kimmeridgian soils give the wines the minerality so typical of great Chablis. His unusual horizontal fermentation tanks give the wines more lees contact during maturation, which add a layer of extra complexity to his beautiful, pure, wines.
When to drink:
Meaty fish like turbot, or halibut are just the ticket here. It's pretty versatile though and white meats and vegetarian dishes will pair just as well.
Suitable for Vegans
