Emilie and Laurence, the sisters who run Domaine Séguinot, aim to express the 'true' Chablis style, letting the characteristic minerality and freshness come through clearly. And their south-western facing vineyards give them naturally ripe, well-balanced fruit, meaning they can achieve this lean, steely style without anything feeling austere or thin. What you get is white nectarine and citrus, wrapped in chalky mineral notes. The acidity's bright and mouth-watering, the finish clean and long, with that signature flinty edge lingering at the end.

Superb with fresh oysters or grilled sea bass - the steely acidity and mineral edge are made for seafood. Works just as well with tangy goat's cheese, or simply on its own.

Up in the northern reaches of Chablis, in Maligny on the right bank of the Serein, Domaine Séguinot et Filles has been going since 1971. The modestly sized 20+ hectare estate is now run by sisters Emilie and Laurence, who've largely taken over from their father Daniel. Their style is to bring out the characteristic minerality and freshness of Chablis without using oak at any stage. Their Premier Cru holdings include parcels in Fourchaume and Homme Mort, benefiting from Maligny's south-western exposure and the village's reputation for producing rich, well-balanced Chablis.
