But surely the leanest, most razor-sharp, bone-dry of them all comes from the Basque Country, in the shape of Getariako Txakolina. Bracing, salty, and with a slight natural spritz, it's like a cold slap from the Bay of Biscay - in the best possible way. And Ameztoi's take is everything you want from Txakolina - racy, briny, and buzzing with life. Classic bracing Basque at full throttle.
The Producer:
With sweeping views over the Bay of Biscay, Ameztoi are among the Basque Country's most historic Txakoli producers, with a winemaking history stretching back to 1820 and five generations of family at the helm. Their 50 hectares of vines - a sizeable holding in Txakoli terms - surround the winery itself and are mostly planted to Hondarrabi Zuri, the native Basque grape behind the region's famously bright, zesty whites. For years, Txakoli was barely seen outside the Basque Country, but Ameztoi were one of the first to export and introduce these distinctive northern Spanish wines to a wider audience. They remain one of the region's best-known and most respected names - and not just for the view.
When to drink:
The sine qua non of seafood wine - if you'll forgive the Latin.
