As the January chill sets in, there is nothing quite like a glass of bold red wine to take the edge off the evening.

But before you reach for the corkscrew, there is one simple step that can transform your bottle from "good" to "exceptional": decanting.

Decanting isn't just about ceremony; it’s about science. By giving your wine some room to breathe, you allow it to interact with oxygen, which softens harsh tannins and releases hidden aromatic layers. This month, we are using two of our favorite winter bottles to show you exactly how it’s done.

The "Splash Decant" for Vibrant Youth

The Wine: Altos Las Hormigas Malbec Clasico (2022)
This Malbec is a powerhouse of high-altitude fruit. Because it is a young, structured wine, its tannins can sometimes feel a bit "tight" straight out of the bottle.

The Method: Pour the Malbec steadily into your decanter, allowing it to splash against the glass walls. This vigorous aeration wakes up the vibrant plum and violet notes, smoothing out the finish for a much more approachable sip.

The "Gentle Pour" for Aged Elegance

The Wine: Chateau Jacques Noir, Saint-Émilion (2015)
At ten years old, this Saint-Émilion has reached a beautiful stage of maturity. Over time, fine wines like this often develop natural sediment in the bottle.

The Method: Unlike the Malbec, this requires a delicate touch. Pour slowly and steadily into the decanter, keeping an eye on the "shoulder" of the bottle. Stop as soon as you see the dark sediment reach the neck. This ensures your glass is perfectly clear, allowing the complex aromas of truffle, leather, and ripe plum to take center stage.

How long should you wait?

For the Altos Las Hormigas Malbec, aim for 30–60 minutes of air. For the Chateau Jacques Noir, 15–30 minutes is often plenty to let it open up without losing its delicate older nuances.
