Highly accomplished rich and minerally white from southern Burgundy.
The lowdown:
Based in the village of Vergisson Éric Forest is one of the most highly acclaimed winemakers in the Mâconnais and is the 8th generation winemaker in his family. He has just 5 hectares of vines, with biodynamics playing a big part in his viticulture, of which his Mâcon-Vergisson occupies a small proportion. This plot sits at 400m above sea level on a gentle North-East facing slope of the impressive Rock of Vergisson with the wines produced here offering a sophistication and fresh minerality. The grapes are hand-picked and undergo a gentle pressing before fermentation and then are matured on the lees for 12 months in oak barrels with Éric then doing the bottling himself. There are plenty of ripe stone fruit, citrus and slightly honeyed aromas leading onto a palate with real precision and finesse. Fresh and elegant with an almost saline minerality, beautifully balanced and with a long length.
When to drink:
Try with rich butter and/or cream based dishes such as a creamy leak tart or fish with butter sauce.
