Amber coloured, true dry Amontilla sherry with a rich, nutty flavour.
The lowdown:
It's best to think of proper Amontillado as an aged Fino sherry. It starts out life under the characteristic 'flor' like a Fino but follows this with further ageing, similar to an Oloroso, in contact with oxygen. This is an outstanding example of the type with a very attractive nose of treacle, toffee and pecan with a hint of earthy spice. Dry and complex with zesty citrus peel, honey notes and nuts, the finish is long and dry with more citrus peel and subtle spicy hints.
The Producer:
Starting in modest circumstances back in 1896 Lustau originally sold their wines to larger producers rather than market them under their own name. It wasn't until the 1940s that they commenced with their own bottlings and this saw the start of real growth in their reputation. While still a small sherry house by the standards of many they are, nevertheless, one of the most respected and their range of sherries, including the acclaimed Almacenista collection, vermouths and brandies are consistently sought after.
When to drink:
Serve just slightly below room temperature and it's great with tapas, or soups and risottos.
