A fantastic soft, velvety and rich English fizz from Sussex. Founded in 2009 by winemaker Ulrich Hoffmann and quickly producing excellent wines. Ulrich believes the key to managing the large amounts of acidity you get in English sparkling is ageing. So their Classic Cuvee spends at least 3 years ageing on its lees and nothing is released until it is deemed ready (annoyingly for the accountants!).
This ageing softens the acidity and adds complexity to the wine. The result is a wine with a aromas of fresh green apples and ripe grapefruit followed by honeyed, crème brulee and toasted hazelnut notes that follow through the viscous and clean palate.
