Clos des Papes has become one of the highly regarded estates in Châteauneuf-du-Pape thanks to the forward-thinking Paul-Vincent Avril. He makes just one red each year and uses all 13 permitted grape varieties. Grenache dominates, as is the norm, but there is also a healthy amount of Mourvedre that brings its dense but bright dark cassis flavours and velvety texture. Other varieties such as Syrah and Counoise add freshness, complexity and balance.
With its full body and big and well balanced tannic structure it'll pair well with red meats all the way up to venison and wild boar.
