The lowdown:
The hilly vineyards around the village of Boutenac are considered the best in the Corbières, so much so that wines from here now have their own appellation Corbières Boutenac to mark them out from others of the region. This example is made from old vine Carignan together with Mourvèdre and Syrah which is whole bunch vinified before being blended and matured in oak barrels for 12 months. Deeply coloured from its youth, the aromas and flavours of cherry and black fruits infused with subtle, exotic spices are deep and complex. It all leads up to a finish that is smooth and satisfying making an exceptionally fine and elegant wine.
When to drink:
Drinking beautifully already but further ageing will improve it more. Hearty dishes are whats called for here - a juicy rare steak, or a warming cassoulet.

Famille Fabre

The Fabre Family have been producing wine in one way or another for over four hundred years. In 1711, they settled in Gasparets, near Narbonne, in the Languedoc and have been cultivating vines ever since. Louis Fabre has been head of the family concern since 1982 which now includes five different estates in the area. In 2014 he was joined by, his daughters and a niece: Clémence, Paule and Jeanne, who are respectively in charge of export sales, accounting and wine tourism. In 1991, Famille Fabre converted to organic viticulture and today 100% of its vineyards are certified organic, producing concentrated, flavoursome wines with genuine provenance.
